Dubai Mocha Cold Brew

Because Dubai chocolate became a huge trend last year, we wanted to create our own version of a Dubai chocolate inspired drink. Since it’s summer, we decided to make it iced using cold brew coffee and, of course, add even more chocolate, because who doesn’t love chocolate?

Introducing the Dubai Mocha Cold Brew.

To make this drink, you will need a few products and some preparation.

The main ingredient is cold brew coffee, and we will be using the Toddy Cold Brew System. The recommended recipe for the Toddy Cold Brew Maker is a 1:6 coffee-to-water ratio (1g of coffee for every 6g of water). For this recipe, we will use 340g of coffee and 2L of cold water with the Toddy brewer listed below.

You will need either the Toddy Cold Brew System – Staycation Edition or the Toddy Cold Brew Coffee Maker with Lid 56oz.

Next, you will need to choose a coffee, preferably a medium-dark blend. We will be using the Java Works Cold Brew Blend Whole Beans 12oz (340g), which is specifically designed for cold brew.

Step 1: Making the Cold Brew

Grab the Toddy Cold Brew Maker. For a cleaner brew, it is best to use both filters: the paper filter and the felt filter inside.

Grind the entire bag of the Java Works Cold Brew Blend using the coarsest grind setting your grinder allows.

Place the stopper securely at the bottom of the white brewing container to prevent leaking. Insert the felt filter, then place the paper filter into the container.

Add the ground coffee into the paper filter.

Pour 2L of cold water over the coffee grounds. Make sure all the grounds are fully submerged, then gently stir to evenly saturate the coffee.

Place the lid on the container and refrigerate for 12–18 hours to steep.

The next day, remove the stopper and strain the brewed coffee into the decanter.

Step 2: Making the Drink

Once your cold brew is ready, you will need the following ingredients:

We will be using either the Bellucci Latte Pro Induction Milk Frother or the Bodum Schiuma Battery Powered Milk Frother.

For this drink, use a 3:2:1 ratio:

Instructions

1. Fill the glass about ¾ full with ice.

2. Add:

o 90ml (3oz) cold brew

3. In a milk frother, combine:

o 60ml (2oz) milk

o 2 pumps (30ml / 1oz)Dubai Chocolate Syrup

o 1 pump (15ml / ½oz) Chocolate Syrup

4. Froth until a smooth cold foam forms.
If you do not have a milk frother, use an electric whisk to thoroughly mix and aerate the ingredients until foamy.

5. Pour the cold foam mixture over the cold brew and ice.

6. Optional: drizzle chocolate sauce on top for a more decorative finish.
