Espresso Carrot Cake Recipe

Espresso Carrot Cake


  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp allspice
  • 4 eggs
  • 1 cup oil
  • 1 cup pecans, chopped
  • 4 cups carrots, chopped
  • 1/2 cup raisins
  • 1 shot espresso

Ingredients - Frosting

  • 1 package cream cheese
  • 4 cups powdered sugar
  • 1 tsp vanilla

  1. Chop carrots and pecans in a food processor.  Set aside.  Mix the dry ingredients in a large bowl.  Set aside.  Pull the shot of espresso.  Set aside.  Oil and lightly flour a 13x9 inch pan.  Set aside.  Preheat oven to 350 degrees.
  2. In a small bowl, beat the eggs and add the espresso to the egg mixture.  Add the oil and egg mixture to the dry ingredients, then mix in the carrots.  Use electric mixer on medium speed to blend.  Fold in pecans and raisins.
  3. Pour the batter into pan. Bake for one hour.
  4. Put two cups of powdered sugar into a mixing bowl.  Open the package of cream cheese, then cut into cubes.  Put cream cheese into the microwave for one minute on high heat.  The will soften the cheese.  Blend the cheese and powdered sugar.  Add vanilla.  Mix with electric mixer until smooth.  Add the remaining 2 cups of powdered sugar.
  5. Let cake cool for 10 minutes after baking.  Frost cake to your taste.
