The reason a pump driven espresso machine is so superior to say a steam driven machine or a stove-top espresso maker is because of the brewing pressure. Steam machines don’t brew your coffee under enough pressure and therefore the espresso not only looks different as there is very little crema, but it tastes much different as well.
