Making its debut in 2019, nearly 3 decades after the original Classic was introduced, the Gaggia Classic EVO Pro is the third successor to what is considered by many to be the best entry-level espresso machine of all time. With many subtle improvements, the now 100% Italian made Classic EVO Pro doesn't change what it doesn't need to; it features the same rapid heating boiler, 3-way solenoid valve, and 58 mm commercial chrome-plated brass portafilter as before. Something that has changed is the new commercial style steam wand. This highly requested feature helps the Classic Pro punch above its weight class, and is capable of producing rich, velvety milk foam, perfect for latte art.
More nuanced updates include the change from a single control panel to distinct rocker switches for power, brew, and steam. The housing of the Classic EVO Pro has also been refined. Indents in the frame make it easier to remove the water reservoir, while the drip tray has been streamlined with rounded edges that accentuate the contours of the machine. The decompression duct has also received a rubber grip for safer and easier removal. Internally, the brew boiler still features embedded heating elements and is ready to brew in five or so minutes. Switching to steam takes another sixty seconds, and a quick flush brings you right back to brew temperature. Brewing on the Classic EVO Pro is even quieter than before thanks to improvements to the pump mounting that reduce noise while operating.
Each Classic EVO Pro ships with a plastic tamper, a single and double shot commercial basket, and a pressurized double shot basket and two-way pin. Out of the box you're equipped to brew both pre-ground and freshly ground coffee, but your best shots will be pulled with freshly ground coffee from a burr grinder. Whether you're cutting your teeth as a new barista, or a veteran looking for a return to form, the Gaggia Classic EVO Pro makes authentic home espresso more accessible than ever.
The filter holder is one of the most important touch points of an espresso machine. The new filter holder of the Classic Evo made of stainless steel without any chrome plating process not only looks better but also ensures flawless performance due to the high quality of the material used.
The new EVO model ensures optimized machine performance combined with improved aesthetic quality. The new Gaggia Classic EVO brewing group is made of EVOBRASS CW510-L brass, a highly technological and chemically safe material that ensures better thermal conductivity (7 times higher than stainless steel) and greater temperature stability when brewing multiple sequential coffees. The new group is combined with a stainless-steel collar that promotes greater compatibility with the new filter holder made of the same material.
The boiler of the Gaggia Classic Evo, made of aluminum, features an additional coating with an inert material that has the function of preventing aluminum from coming into contact with water. This improvement raises the safety standards adopted by Gaggia to safeguard its consumers. It should be noted that aluminum boilers without this coating are just as safe because the toxicity threshold of aluminum is very high.
An additional support, made of stainless steel, ensures easier assembly operations and in parallel also better management of maintenance operations.
A long awaited update, the commercial steam wand gives you full control over milk frothing. The Classic EVO Pro's impressive steam power allows you to produce perfectly textured milk for latte art.
The Classic Pro's control panel has been split up into three switches for power, brewing, and steaming. Each switch has its own indicator light to tell you when the machine is on, ready to brew, and ready to steam.
The stainless frame has been redesigned to make it easier to remove the water reservoir. Additionally, the drip tray and surrounding frame have been streamlined for a more seamless look.
Better mounting of the vibration pump has reduced the amount of noise produced while brewing. As a result, the Classic EVO Pro produces the same excellent espresso as before, but quieter than ever.
